Washing Station

This batch was processed at the Boku Abel Washing Station where more than 600 coffee farmers bring their coffee cherries. This station belongs to the Snap Specialty Coffee group in Addis Ababa, a company run by Neguesse since 2008 that he decided to start because of his great passion for coffee. Neguesse collaborates with washing stations in Sidama, Yirgacheffe and Guji helping in logistics, production and export.

Snap is committed to improving the lives of coffee farmers and also improving the quality of coffee. To do this, they teach more than 6,000 coffee farmers the cultivation and processing techniques as well as provide the appropriate technical equipment to make all of this possible. Also, it is committed to the environment and develops sustainable practices through soil and water conservation as well as becoming aware of deforestation and sustainability.

Process Method

Boku Esayas Beriso it’s a natural lot. This means that they receive the cherries at the washing station and select all those that are at their ripening point.
Afterwards, they put them on raised stretchers to dry in the sun and ferment them with the skin, pulp and mucilage. They stir for uniform drying and cover them during the highest hours of sun.
After about 7-10 days, the dried cherries are removed from the elevated pallets and stored in bags and then taken to the dry mill where they are hulled, selected, bagged and exported.

Origin

Southern Ethiopia is the original home of coffee where countless varieties grow wild in its humid, mountainous forests. All plants of the Coffea arabica species worldwide are descendants of the plants from southern Ethiopia.
Shakiso is a rarely mentioned town in Ethiopia. Areas like Yirgacheffe, Sidamo, Harrar etc. They are much better known, but not necessarily better when it comes to cup quality. Shakiso is several hours south of Yirgacheffe in the Guji area. Until recently the city was rarely recorded on maps. It is not easily accessible and there is not much there other than coffee forests and two large gold mines that have created tension and conflict in recent history.
The coffees from this area have an unmatched floral component that is very rarely found in other coffees. The best of them also have tremendously articulate fruit components, saturated sweetness and mouthfeel that coats the entire palate.
Coffee production is quite new in the area. Young trees planted in cool soil with excellent shade tend to excel in quality for a good amount of time. This is probably the case here along with the basic prerequisites of high altitude, native varieties and well-made mill. More than 5,000 hectares are planted in Shakiso, so although recent, coffee production is a critical component to the local economy.
