Washing Station

The Chelbessa washing station is fairly new to the Yirgacheffe coffee scene. However, this family-owned wash station is producing exceptional coffees on par with some of the region’s most renowned wash stations.
Chelbessa partners with SNAP Coffee Exporters, who have been promoting Ethiopian specialty coffee since 2008. The company operates three coffee washing and processing stations in Chelelektu, Kochere and partners with washing stations in Uraga, Guji and Nensebo. More recently, they began working with Chelbessa to serve some 500 small producers in and around the city (Kebele) of Chelbessa.
Farmers in this region have grown coffee generation after generation. They are true specialists and are committed to using the best chemical-free growing methods. These methods result in a product that stands out for it, giving a great result in a cup with a truly exceptional profile.

Process

The wash station includes 12 standardized wash tanks and 360 drying beds. This batch of Chelbessa is a natural process in which deliveries of ripe cherries from contributing small growers are sorted by hand. The best cherries are taken to the raised stretchers where they are dried in the sun for approximately 21 days, stirring them constantly for uniform drying.

Origin

When we enter in to the world of washed coffees in southern Ethiopia – the most famous names are Yirgacheffe and Sidama – we enter to a special and different sensory world from that to which most coffee drinkers are use to it. These coffees, grown in large part of very rare native varieties of Arabicas in almost any other place in the world, have intense and often extravagant aromatic profiles: lemon, bergamot, flowers, and cocoa with bright acidity fruits.

Located in southern Ethiopia, the Sidama region has a high quality coffee. The Gedeo area is named for the Gedeo people, whose lands are in this territory. It extends to the south of Sidama as a narrow strip of land along the eastern slope of the highlands of Ethiopia, in the Oromia region.
