Washing Station
In the remote village of Raro Nansebo, in the Uraga district (Guji, Ethiopia), a group of 15 coffee farmers cultivate coffee using a traditional farming system. Beans, peas, and false bananas—highly prized in local cuisine—are interspersed among the coffee plants, all under a canopy of trees that protects the soil and balances the ecosystem.
Until recently, this area was used for grazing; therefore, the coffee plants are young (barely ten years old) and grow in highly fertile volcanic soil. Each farmer works small plots of 2.5 to 3 hectares at high altitude, cultivating varieties developed by the Jimma Agricultural Research Center (74110 and 74112), selected for their disease resistance and known for their citrus and floral cup profile. In addition, the farmers themselves select and exchange indigenous plants, contributing genetic diversity and richness to the terroir.
This coffee reflects a virtually untouched environment, high-quality young trees, and farmers with a deep understanding of their craft, resulting in a cup of great expressiveness and elegance.
During the harvest, the producers take the cherries to Sooko Coffee, a processing station founded in 2018 by Ture Waji, Eegata Alaka, and Fedesha Wodesa. There, tradition and technical support are combined: coffee farmers are trained in good agricultural practices, pre-harvest loans are offered, and an active social policy (“women first”) is promoted, including the construction of a school and improvements to local infrastructure.
The result is a carefully managed process at every stage, ensuring exceptionally high-quality coffees and a strong community connection.
Process Method
To minimize fermentation, farmers deliver the cherries to the washing station at night. There, a thorough sorting process removes overripe or underripe cherries. The coffee is then dried on raised African beds in full sun, following Sookoo Coffee’s strict drying protocols, with a maximum layer density of 4 cm and six rotations per day.
This process reduces the risk of over-fermentation and defects. The standard drying time for their coffee is between 21 and 28 days, ensuring optimal flavor development.
Origin
Ethiopia is widely known as the birthplace of coffee. As early as the 10th century, Ethiopians traversed the mountains eating the red cherries of wild coffee trees. It is from this indigenous plant that Arabica coffee spread worldwide.
Ethiopia is the leading coffee producer in Africa and the sixth largest in the world. It accounts for almost 70% of its export earnings and employs approximately 15 million Ethiopians. There is one main harvest per year, taking place between November and February. More than half of Ethiopia’s coffee is produced on small plots of land around the farmer’s house, known as the ‘coffee garden’. Only 5% of Ethiopian coffee is produced on large estates, and these tend to be low-altitude plantations in the west of the country. Ethiopia utilizes both washed and natural processing methods, with a wide variety of cultivars producing some of the most magnificent and unique coffees in the world. Guji is an area in the Oromia region of southern Ethiopia. Most of the residents of this region are Oromo and speak the Oromo language, which is completely different from Ethiopia’s main language, Amharic. Like many of the country’s coffee-growing regions, the culture of the Guji Zone varies from wearda to wearda. The zone’s main source of fresh water is the Ganale Dorya River, which also serves as the boundary with the neighboring Bale Zone to the east.
To the west, Guji borders the southern Gedeb woreda of the Gedeo Zone in the neighboring Southern Nations, Nationalities, and People’s Region, part of the Yirgacheffe coffee-growing area.
