The Farm

Fernando Chazoi is a leading figure within the Inga indigenous community of Aponte, recognized for his discipline, meticulous approach to coffee farming, and deep respect for tradition. On his farm, every stage of the work—from cultivation to the care of the coffee—is carried out with attention and consistency, reflecting an understanding of coffee as a cultural heritage and a long-term commitment.

Beyond his work as a coffee farmer, Fernando maintains a clear generational vision: he prioritizes his daughters’ education as the foundation for the future of his family and community. His work embodies values of cultural pride, responsibility, and continuity, serving as an example within Aponte.

The Inga community of Aponte maintains a profound relationship with Mother Earth, based on an ancestral worldview of respect and balance. In recent years, the territory has undergone a significant transformation, regaining its autonomy through coffee and collectively led projects. This process has given rise to a strong, resilient coffee culture oriented toward a sustainable future, where coffee is both an economic livelihood and an expression of identity.

Process Method

Fernando Chazoi’s coffee is produced using traditional methods, managed with the same care and precision that characterize his work in the fields. Processing is understood as a natural extension of cultivation, respecting the rhythms of the environment and the knowledge passed down within the community. This approach prioritizes quality, cleanliness, and consistency in the cup, reinforcing the link between territory, culture, and coffee.

This batch is processed using the Honey method: the cherries are picked at their optimal ripeness and then taken to the mechanical pulper (without water) to extract the pulp and mucilage. Once this process is complete, the beans, with the mucilage still attached, are placed directly in the sun on elevated racks. Once they reach 11% moisture, they are stored in jute sacks to rest: this allows the beans to develop all the sensory characteristics we find later.

After this process is finished, the beans are taken to the hullers for shipping.

Origin

Nariño is the southernmost province of Colombia, bordered by Ecuador and home to thousands of small coffee producing families. The three chains of Andean mountains of Colombia converge in Nariño, presenting ideal altitudes and fertile soils for the production of high Arabica. It is necessary to emphasize that its rough slopes allow that, in a relatively short distance, different temperatures occur during the day.

This peculiarity presents different local eco-climates and microclimates that give suitable conditions for coffee cultivation in terms of availability of water, temperature, solar radiation and wind regime. Its proximity to the equator, about 1 degree to the north, makes warm and humid winds from the bottom of the valleys rise at night, allowing coffee to rise to heights reaching extreme altitudes, some more than 2.300 meters above sea level!

This area of production presents solar radiation of 1.660 hours on average during the year, rain cycles of 1.860 mm, soils with a high content of organic matter that make possible the cultivation of coffee at great heights and temperatures on average of 19°C. Most of the farms have shade, certifications of sustainability and much appreciation, respect and love for nature.

The particular geography of Nariño and its proximity to coastal and land borders has historically transformed it into a corridor for illicit trade routes, resulting in unjustified violence against the residents of remote mountain farms.Nowadays, thanks to the particularly resilient and intrepid spirit of Nariño coffee growers, the small region is a respected nucleus in coffee innovation.

Salvador Sans participated as judge in the 8th edition of the Cup of Excellence of Colombia held in San Juan de Pastos, in Nariño – 2010.
