The Farm

This lot from Finca Miramar won 5th place in the washed and semi-washed category of the 2025 El Salvador Cup of Excellence, where Claudia Sans, Head of Quality Control at Cafés el Magnífico, was a judge. Along with Goldkind, an Austrian roaster bid for this lot.

Finca Miramar belongs to Comercializadora Alfaro Díaz Nuila, S.A. de C.V. (ALFACOMER), founded in 2019 by Fernando Felipe Alfaro Castañeda, who has over 35 years of experience in coffee cultivation, processing, and export.

Located on the slopes of the San Salvador Volcano, between 1,550 and 1,750 m above sea level, the farm covers approximately 15.5 hectares of fertile volcanic soils. The project was born with the vision of producing coffees of exceptional quality, geared toward the competition and specialty markets.

Miramar combines traditional varieties such as Bourbon and Typica with a progressive renewal that includes Geisha, SL-28, Pacamara, Pink Bourbon, and Red Bourbon, focusing on genetic innovation and cup excellence. Its philosophy integrates technical knowledge, respect for the environment, and sustainable management that seeks to promote Salvadoran coffee internationally.

Process Method

The 5th-place winning lot in the 2025 Cup of Excellence (88.88 pts) was processed using a Semi-Washed method. The cherries are hand-picked and processed at the El Carmen mill. They are then dried on clay patios for 15 days, before resting in the cellar for a month to stabilize humidity and develop their sensory profile.

In addition, the farm experiments with natural anaerobic fermentations, in which the cherries are fermented for 192 hours and dried on African beds for more than 30 days, seeking aromatic complexity and prolonged sweetness.

The result is a balanced coffee with clean sweetness, bright acidity, and fruity and floral notes that open up during the tasting, allowing us to enjoy its great complexity in the cup and a lingering sweet aftertaste.

Origin

Located in the east of the country, the mountainous region of Tecapa – Chinameca (500 – 2.140 meters above sea level) covers 17.300 hectares where its nearly 3.000 producers can see the dew covering the coffee trees in the early hours of the morning. The most common varieties in the region are: Bourbon, Pacas and Pacamara.

The altitude and the annual precipitation create an ideal microclimate, its situation facing east and west, allows a longer solar exposure, which helps a better maturation of the fruit, and fertile soils with high content of organic and volcanic matter provide high content of phosphorus and potassium nutrients, which are necessary to obtain high quality coffees.
