Esayas Beriso is an outstanding coffee farmer working in the Hambela Wamena district, in the Oromia (Guji) region of Ethiopia, at approximately 2,350 meters above sea level — one of the highest and most renowned coffee-growing areas in the country.

His journey in coffee began in Dimtu, first working in the public sector before growing within the coffee business alongside his brothers, initially collecting cherries from neighboring producers to sell to local processing stations. Later, Esayas planted his own coffee trees and in 2009 decided to dedicate his life to coffee cultivation. Today, his wife Meskerem plays a key role in managing the harvest and purchasing cherries from nearby farms, consolidating an integrated and family-based production model.

Since 2017, he has worked with SNAP, an Ethiopian export partner that provides training, technical support, and resources to producers, strengthening both quality and sustainability within the production process. SNAP is committed to improving the livelihoods of coffee farmers.

To achieve this, they train more than 6,000 producers in cultivation and processing techniques and provide the necessary technical equipment to make this possible. They also maintain a strong environmental commitment, developing sustainable practices through soil and water conservation and promoting awareness of deforestation.

Process method

This lot has been processed using the natural method: cherries are hand-harvested, sorted, and dry-fermented on raised beds, carefully turned throughout the day and covered during peak sunlight hours and at night to ensure even drying for 7 to 10 days. They are then carefully sorted and milled for export.

This approach enhances aromatic expression and cup clarity typical of Guji coffees, while maintaining the fruity and sweet character of natural processing.

Origin

Southern Ethiopia is the original home of coffee where countless varieties grow wild in its humid, mountainous forests. All plants of the Coffea arabica species worldwide are descendants of the plants from southern Ethiopia.

Shakiso is a rarely mentioned town in Ethiopia. Areas like Yirgacheffe, Sidamo, Harrar etc. They are much better known, but not necessarily better when it comes to cup quality. Shakiso is several hours south of Yirgacheffe in the Guji area. Until recently the city was rarely recorded on maps. It is not easily accessible and there is not much there other than coffee forests and two large gold mines that have created tension and conflict in recent history.

The coffees from this area have an unmatched floral component that is very rarely found in other coffees. The best of them also have tremendously articulate fruit components, saturated sweetness and mouthfeel that coats the entire palate.

Coffee production is quite new in the area. Young trees planted in cool soil with excellent shade tend to excel in quality for a good amount of time. This is probably the case here along with the basic prerequisites of high altitude, native varieties and well-made mill. More than 5,000 hectares are planted in Shakiso, so although recent, coffee production is a critical component to the local economy.
