This coffee comes from smallholder producers in the Yirgacheffe region, one of Ethiopia’s most renowned areas for the elegance and complexity of its coffees. The lot comes specifically from Gerse Kebele, in the Gedeo area, where coffee trees grow between 1,900 and 2,200 meters above sea level, on red clay soils and under the ideal conditions that have made this coffee-growing region famous.
The producers cultivate traditional Ethiopian varieties, commonly referred to as heirloom varieties, together with other locally selected indigenous varieties. Coffee plays an essential role in the family economy and agricultural landscape of Yirgacheffe, where knowledge of coffee cultivation is passed down from generation to generation.
The combination of altitude, climate, and genetic diversity allows producers to obtain some of the world’s most floral, complex, and refined coffee profiles. These characteristics have made Yirgacheffe one of the most highly regarded origins in specialty coffee.
Process method
This lot has been produced using an innovative Cascara-Infused Fermentation process. Carefully selected ripe coffee cherries first undergo flotation to remove lower-density fruit, ensuring that only the highest-quality cherries continue through the process.
Following an additional manual selection, the cherries are depulped and the coffee beans begin fermentation. At this stage, cascara from previously dried natural-process lots is added to the fermentation tanks together with the mucilage and water. This controlled interaction introduces new aromatic dimensions to the coffee while preserving the identity of the origin.
Once fermentation is complete, the coffee is washed with filtered water and then allowed to drain for between 6 and 10 hours before being transferred to raised drying beds, where it continues to lose moisture gradually and under controlled conditions. Finally, the coffee is conditioned and prepared for export.
This process contributes greater aromatic intensity and complexity in the cup while maintaining the cleanliness and clarity characteristic of washed Yirgacheffe coffees.
Origin
When we enter the world of washed coffees from southern Ethiopia — the most famous names being Yirgacheffe and Sidama — we discover a unique sensory world, very different from what most coffee drinkers are accustomed to. These coffees, largely cultivated from indigenous Arabica varieties that are rare in almost any other part of the world, display intense and often distinctive aromatic profiles: lemon, bergamot, flowers, cocoa, and fruits with a bright acidity.
Located in southern Ethiopia, the Yirgacheffe region produces exceptionally high-quality coffee and is also known as the “Champagne region of the coffee world.” It offers ideal growing conditions for excellent coffee, with well-balanced rainfall and fertile soils rich in essential minerals.
The local landscape is characterized by steep, misty valleys and challenging roads, particularly during the rainy season, when muddy slopes can make access difficult. It is as though beauty and ruggedness are inseparable from the region.
Yirgacheffe is both the name of a locality and a designation associated with a particular coffee quality and profile.
The so-called heirloom varieties are a diverse and complex mixture of indigenous Ethiopian coffee varieties, and each area or village can develop its own distinctive flavor profile, shaped over generations by growing conditions such as soil, elevation, and climate. These profiles form part of the broader classification system used for Ethiopian coffees, including Sidamo, Harrar, Limu, Djimmah, and others.
Yirgacheffe coffees are widely recognized for some of the most distinctive flavor profiles in the coffee world, often characterized by pronounced floral aromas and intense citrus notes.
The Gedeo area takes its name from the Gedeo people, whose ancestral lands are located within this territory. It extends south of Sidama as a narrow strip of land along the eastern slopes of the Ethiopian Highlands.
