La Finca (The Farm)

Brayan Andrés Plaza is a young coffee farmer from Suaza, in the Huila province of Colombia. He works alongside his father and two uncles, and is responsible for processing procedures on the property. The farm predominantly grows varieties like Bourbon Rosado, Colombia, and Castillo. In addition, they are currently exploring varieties such as Geisha, Laurina, and Pacamara, which will be featured in future harvests.
When it comes to fermentation processes on the farm, Brayan can be described as quite the experimenter. To further his expertise, he has attended various courses and seminars, applying his newfound knowledge to expand and enhance the flavour profiles of coffees from his farm. Brayan has also established a laboratory in Acevedo dedicated to cupping their coffees, always striving to increase quality. As part of this endeavour, he extends invitations to other coffee growers in the municipality to sample the coffees from their respective farms, supporting an increase in their own quality standards.
For Brayan, the principal goal is to enhance quality of life for coffee farmers in his region, thereby fostering the production of specialty coffee.

Process

Cherries are harvested at their peak ripeness and carefully placed in closed fermentation tanks (anaerobic) for a period of 37 hours. Subsequently, they are spread out on raised beds to undergo a natural drying process. This drying process spans over 30 days until the cherries reach complete dehydration, resembling raisins. Once dried, they are sorted and stored in bags on the farm to stabilise the beans and fully develop their taste potential.

Huila is a province in southwestern Colombia. Located between the central and eastern mountain ranges, the
Magdalena River winds through the entire region. Huila is also home to Colombia’s second highest peak: the Nevado del Huila volcano. With year-round average temperature of 18° C and fertile soil containing a variety of rich mineral resources, Huila boasts a vibrant agricultural industry. Descendants of indigenous groups (Pieces, Halcones and Pijaos) continue to inhabit their places of origin in this region, living in specific protected areas and other small communities.
