Washing station
Danche is a washing station located in Chelbesa, within the Gedeb area, one of the most renowned regions in southern Ethiopia for the quality and expressiveness of its coffees. The station is managed by SNAP Specialty Coffee, a producer partner founded in Addis Ababa in 2008 by Negusse, with a strong commitment to consistency, education, and sustainability.
Around 800 smallholder farmers deliver their cherries to this station, where they are processed and separated into different lots. In this area, coffee grows among dense vegetation, alongside shade trees and companion crops, forming an integral part of the landscape and local economy.
SNAP works closely with coffee-growing communities, providing technical training and agronomic support to thousands of producers. Its agronomy team has trained more than 6,000 coffee farmers in nursery management, soil management, crop diversification, and climate-adapted agriculture, aiming to improve both coffee quality and the sustainability of the production system.
This lot is composed of the Ethiopian varieties Kurume and Wolisho, traditional varieties recognized for their ability to express the floral, complex, and elegant character of coffees from this region
Process method
This batch has been produced using the washed process. Once the cherries arrive at Danche Station, they undergo an initial sorting in water to remove defective or undersized fruit. Subsequently, the cherries are pulped and undergo a dry fermentation of approximately 96 hours before a final washing to completely remove the mucilage.
After the mucilage has been completely removed, the parchment is dried on elevated racks for 12 to 14 days, being turned regularly to ensure even dehydration and a clean, uniform drying process.
Origin
When we enter in to the world of washed coffees in southern Ethiopia the most famous names are Yirgacheffe and Sidama we enter to a special and different sensory world from that to which most coffee drinkers are use to it. These coffees, grown in large part of very rare native varieties of Arabicas in almost any other place in the world, have intense and often extravagant aromatic profiles: lemon, bergamot, flowers, and cocoa with bright acidity fruits.
Located in southern Ethiopia, the Sidama region has a high quality coffee. The Gedeo area is named for the Gedeo people, whose lands are in this territory. It extends to the south of Sidama as a narrow strip of land along the eastern slope of the highlands of Ethiopia, in the Oromia region.
